Seafood Fondue

1 pkg crawfish tail meat
1 pkg shrimp, cleaned and deveined - any size shrimp is fine, but I usually use small salad shrimp.
1 pkg imitation crab meat - chopped in small pieces
1 Velveeta loaf
1 cup of milk
1 can Ro-tel - undrained
1/8 stick of butter
garlic salt & pepper

Saute seafood in butter with garlic salt & pepper for about 5 minutes. Even if you buy cooked shrimp, it adds a bit of flavor to saute the three different seafood combinations together in butter. Cut Velveeta up large cubes for easier melting. Put all ingredients in crock pot, stirring occassionally until well-blended. Serve with Hawaiian Sweet Bread, over rice, with crackers or chips. This is a DELICIOUS recipe for anyone who likes seafood!

I usually serve mine with Hawaiian Sweet Bread, but many of my friends ask me to make it and they put it over white rice.

Don't feel bad - my kids and hubby eat away while I just sit and watch and glare and WISHHHHHHHHH I had their metabolism!! LOL!

Hope y'all enjoy it! This is actually one of my absolute favorites and I came up with it one day while thinking that I was in the mood for cheese...but I also wanted shrimp...or maybe crab....or crawfish! So, I went and bought everything, through it in the crockpot and ate it. Later I added the Ro-tel and the seafood saute with garlic salt and pepper. Really, you can add anything you like and it'll be gooooooooooooood!!! Very Happy

Ok..here's an ole' midwest standard - you'll love it!!

Hashbrown Surprise (I made this up just this second - I have nooo idea what its called)

Oh, by the way - it was the very first thing I had ever learned to make - and still do - though not often because its faaaaaatttttning.

2 Bags of (cubed) frozen hashbrowns (for 9x13 cass dish or 1 bag for 8x11)
16oz sour cream (plus one 8 oz for large dish)
1 can of cream of chicken soup (don't sub mushroom)
2 bags of grated cheese (I grate my own)
2 tbls of dried onion (you can do fresh if you like)
4 cups (smashed) corn flakes
1/2 cup melted butter

Place hashbrowns in bottom cassorole dish
In seperate bowl, combine sc, cream of chicken soup, onion, stir
Add cheese to mixture
Pour mixture over potatoes evenly
Place corn flakes over that - evenly
Pour melted butter over corn flakes
Bake at 375 for 1 hour (covered by foil)
Remove foil and bake for 1/2 hour to brown

Some of the women here love to use potatoe chips instead of corn flakes
but I prefer that later.

This, literally, takes 5 minutes to prepare and you'll have leftovers for days. To make more creamy, add 1/2 can more of soup.

TaDah - Hashbrown surprise!!

ThERE IS NO LOVE SINCERER THAN THE LOVE OF FOOD

Hi , I am not one to share recipes because thats how i make a living cooking out in a bush camp for the oil rigs , a big bunch of babies that whine if the cookies arent big enough. Its a very srecretive thing to keep your recipes just to keep your job and be the "best " cook out there . But i will share a few with everyone because im sure no one else works for the same company as me. ok here we go :

#1 Baked Crab Dip

2 pkgs of cream cheese
2 cans crab meat
1 tbsp lemon juice
1/4 tsp salt

soften cheese and add rest of ingredients and mix well , put in oven proof baking dish and bake for 30 minutes or until golden on top . baking brings out the flavor of the crab and cheese.
Use as dip for fresh vegetables it crackers.
havent met anyone that doesnt like it unlesss the dont like crab.

#2 Secret to Melt in your mouth Roast beef or Steaks
Take your favorite steak spice and add equal amount of crystal ice tea powder to it , mix it up real well and sub on steaks or roast . Makes the meat so tender you can cut it with a spoon.

#3
[u]Original Tll House Chocolate Chip Cookies
2 1/4 cups flour
1 tsp. baking soda
1 cup butter softened or margaine
3/4 cup sugar
3/4 cup brown sugar
1 tsp. vanilla flavoring
2 eggs
2 cups of milk chocolate chips
1 cup chopped walnuts

Combine flour and soda in a large bowl. Beat butter ,sugar , brown sugar and vanilla with mixer. Add eggs one at a time, beating well after each egg, gradually beat in flour mixture. stir in chocolate chips and nuts.Drpo by tablespoon onto ungreased cookie sheet. bake at 350 * for about 8 -10 minutes , no longer . cool . these cookies will melt in your mouth !!!

# 4 Romaine Salad with Oranges and Pecans
2 heads of Romaine Lettuce wash and tear into small pieces
3/4 cup pecan halves toasted
2 oranges peeled and sliced or 2 cans mandarine orange segments
1/4 cup vinegar
1/2 cup sugar
1 cup oil
1 tsp dry mustard
1 tsp salt
1/2 small red onion chopped
2 tbsp water

Place lettuce , oranges and pecans on a salad bowl. Combine oil, vinegar, sugar , salt, onion , mustard and water in blender . Blend until well mixed , soft of a pink color . Pour over lettuce mixture and toss .
Very Very Good Salad!!!

Okay, alcoholic drinks:
Icon_pidu
Jell-o Shots (I was surprised how many of my friends had never had them!)

1 pkg jell-o mix - your favorite flavor
1 cup boiling water - MUST BE BOILING!
1 cup Vodka

Mix jello in bowl with boiling water. Stir until jello is completely dissolved. Add in Vodka and mix well. Pour liquid jello into tiny plastic cups (I buy mine from party city, but the mini dixie style cups at Wal-mart work fine) and chill until firm. DO NOT LET THE JELLO SIT - Pour into cups immediately because the jello starts to set right away.

That's the standard jello shots...I change mine up by using flavored RUM instead of the Vodka. I use VANILLA RUM with Strawberry or Peach jello....PINEAPPLE RUM with ORANGE JELLO...COCOUNUT FLAVORED RUM with LIME OR LEMON Jello. Any flavored rum is good. There are also flavored vodkas now, too, so try something new! It takes the "alcohol" flavor away and makes yummy jello shots. I have even poured the jello into Martini glasses and chilled, then topped with whipped cream, a sprig of mint, and served with a spoon at parties.

This is a recipe I made up for scalloped potatoes using the basics.

Scalloped Potatoes

4-6 large potatoes, peeled and sliced into circles
1 pkg shredded cheddar cheese, or cheese blend (monterrey, etc.)
1/8 loaf of Velveeta, cut in cubes
1/4 cup bacon bits (optional)
1/4 cup chives, chopped finely (optional)
1 cup milk
1 cup hot water
1/2 stick of butter, cut into small pats
salt & pepper

Begin by soaking the sliced potatoes in water for about 2-3 hours. This is not necessary, but it makes the potatoes cook faster and it seems to make better scalloped potatoes. If you do not soak the potatoes, substitute boiling water for hot water above.

Preheat oven to 375 degrees. Put potato slices, Velveeta, milk, water, butter, and 2/3 of shredded cheese in casserole dish. Mix together and add salt & pepper. Sprinkle remaining cheese over the top. Bake 30-40 minutes, or until potatoes are tender and cheese is bubbling.

These potatoes are so good, even my 6-year old, who doesn't like cheese, eats them! Change up the recipe a bit by adding 2-3 tablespoons of cream cheese or sour cream for a creamier potato casserole.

Annnddd, since we love meat and potatoes in my house, I also made up a Potato & Beef Casserole.

6-8 large potatoes, peeled and sliced
1 pound ground beef
1 pkg, plus 1 cup shredded cheese (any brand or flavor)
1/2 cup of diced onions (use less or more, if you prefer)
1 can cream of mushroom soup OR 1 can of beef broth - use the soup if you prefer your casserole creamy.
1/2 cup of water
garlic salt, pepper, or whatever seasoning you like

Try to soak the potatoes for faster cooking, as with the scalloped potatoes. Preheat oven to 375 degrees. Begin by browning ground meat with onions, season well with garlic salt, pepper, or other seasoning. Drain meat. Mix soup or broth and water with ground meat.

Next, layer casserole dish, or baking dish, with 1/3 or 1/4 of potatoes, similar to lasagna. Spoon equal (1/3 or 1/4) of the meat mixture over top of potatoes. Sprinkle 1/3 or 1/4 cheese over the top, and repeat. If there is remaining liquid from the meat mixture, pour it over the top. Top with the remaining cheese and bake 35-45 minutes. Potatoes will be tender and cheese will be golden and bubbly. Serve with side salad and rolls....or buttered corn on the cob and Texas toast - yummy!
